Multi-use, multi-featured 7-qt pot

I've had All Clad cookware for years and I guess I take it for granted. I recently became enamored with a pot shown on TV. I'd actually forgotten how much better All Clad is because of its thick stainless steel. The new pot seemed so thin by comparison and sure enough it didn't take long before something burned in it. I eventually got it clean but the interior finish is darkened permanently. It just reminded me to stick to the All Clad.This particular pot is wonderful for many reasons. First of all, because it is tall and relatively narrow I use it for things that would splatter and make a mess if using the three or even the four quart pot. This one is a little bigger around than the three and four quart pans and the covers aren't interchangeable, but it's a small difference. The pot is mostly just taller. I wouldn't make tomato sauce without it or strawberry jam that tends to climb pot walls and wants to boil over. While the pot is tall, it's not so tall I can't get in there easily to tend my stew or whatever.Secondly, because of the shape, it doesn't take up all the space in my dishwasher. I can even get both the pot and the insert in there at once. Although I use the pot alone for lots of things like big batches of soup, the insert adds many more options. It's supposed to be for pasta, but I actually don't use it for that because I rarely make that much at once. I use it for corn on the cob and boiling potatoes where I want to be able to lift out and drain the contents all in one shot, but also for making stock where I can lift out the chicken carcass and flavoring veggies leaving only the nice stock, already strained, in the pot. When the stock is cooled I ladle it right into my jars and freeze it for later use or go on to make soup. I haven't had to pour a heavy pot into a colander to strain out the solids while saving the liquid in another pot.Since the insert doesn't sit on the bottom of the pot (up by about an inch), its contents will not burn and you don't need as much water. Whatever is in the insert that is not submerged will cook down or steam with the cover on. In fact you need to be careful not to overfill the pot with water lest it boil over between the pot and the insert. Since the insert sits higher, it's easy to get carried away adding too much water.All in all, this is one of the most used pots in my house and highly recommended.

Centerpiece of our All Clad collection

We have been building our collection of All Clad pots and pans for about 10 years now, and for whatever reason never added this until just now. I can't believe that we lived without it for so long. It has quickly become our most used piece. The build quality is very high, as we have come to expect with All Clad. This should be the first piece you buy if you are interested in having All Clad pots and pans.

Great pressure canner

This is a very high quality, heavy weight canner. It practically screams, "Industrial strength!" The slide clips and screw-downs securely fasten the lid to the pot. No blow-outs with this baby. The weighted pressure gauge makes operation almost foolproof. And no gasket required! Before purchasing a canner, I did a lot of reading in the rec.food.preserving news group. I saw endless inquiries about sources for gaskets for canners ranging from a few years old to many decades old. It was clear some of these people had spent many, many hours in search of a gasket. Avoiding the need for a gasket became a major criteria for my purchase.I've had my canner for a couple years and am still impressed with the quality. There are only two negatives I can think of. The heavy weight of the canner is a plus for strength and longevity, but it can work against you. The canner weighs 20 pounds when it's empty. Unless you work out regluarly, you're not going to fill the canner on the counter and then carry it to the stove. The other potential negative is the height. This canner requires at least a 16 inch clearance over your range. If your range has an upper oven the canner might not fit.

Perfect!

When I first ordered this canner, I wasn't sure if I would be able to maintain a steady pressure with my "pulsating" flat-top stove. With the thick aluminum walls, I have no problems at all. In fact, with such thick walls, I can put the burner on "high" and it will slowly build up pressure so I don't have to stand over the stove and constantly monitor as the pressure increases. Once at pressure, it is very easy to maintain the required pressure without having to constantly vent off excess pressure. The owner's manual recommends one to four jiggles per minute. It takes longer for this canner to cool down than others due to the thick walls. I factor this in to my processing time. It will maintain it's pressure (15 psi) for almost another 10 minutes with the burner off. This canner is designed to fit 7 quart jars perfectly. If your looking for a canner, this is it!

Excellent pressure Canner, pretty good pressure cooker

I've had my Wisconsin Aluminum Foundry All American pressure canner for a couple of years, and I'm still very happy with the purchase. I can use it to make a humongous batch of chicken stock, then turn around and can that very batch... I agree with the comments made by the first two reviewers concerning its weight, size, etc. This will outlast you and your kids. Very well made, and the company has a full line of replacement parts should they ever be needed.

I give this five stars as a canner, and three as a cooker. The only reason I downrate it slightly as a cooker is that it is so big and unwieldy. If you regularly have to cook huge batches of food, though, this may be just what you need. If you don't ordinarily cook up enough to feed an army, you might be happier with a smaller (say, 6 to 8 quart) pressure cooker (I love my Kuhn Rikon 6 quart stockpot). Also: if you are planning to can a LOT of stuff, you might consider getting the Wisconsin Aluminum Foundry model 930--it can handle 14 quart jars at a time, whereas this one can only handle 7 quart jars.

All in all, a very well made item. Get this and a copy of Lorna Sass's "Cooking Under Pressure", a copy of the Ball Blue Book, and go conquer the (canning) world.

Gorgeous! I plan to use it as a latte steamer, just barely fits on the shelf of my Rancillo. Guess I may need to purchase the Breville Duo to match it, LOL!Definately will need a longer expresso thermometer to go with this. I like the way it is double walled, I get tired of having to refroth my milk on seconds, am looking forward to using this!

Great for parties

We had previously rented one of these and realized how much fun and easy they are to use. So we decided to buy one and we are happy we did. It is very easy to set up ad clean and the hotdogs and tamales that we've made have come out tasting fantastic.

Did Not Work

We bought this product to use for a major fundraiser. It arrived just in time for us to do a trial run and the product would not even heat up! One star is for the appearance as that was the only good thing about it. Very disappointing.

Make bigger beer

This is by Geoff (not Paula)I love this thing.It is so nice to get away from the thin walled turkey fryer style pots.Heavy walls, great valve and clear thermometer.I am using this with a Bayou Classic SP10 High-Pressure Outdoor Gas Cooker.The handles get hot from the cooker so have pot holders ready if you need to move it.unless you already own some, buy some larger channel locks to put the thermometer and ball valve on.Even with Teflon tape I get a bit of leaking around my ball valve, just had to REALLY torque down on it to tighten it.This only happened at high heat.Made a great batch of all grain.

A big improvement...

I made the jump from a thin walled 5 gallon pot to this beefy 8, and have now brewed six batches of all grain. This is a big improvement. The temperature control and accuracy is very good. The valve is not only useful but is also a great safety improvement (boiling liquids...). And the size is essential for all grain brewing of a 5+ gallon fermentation wort. The quality of construction is excellent, with the mass being very temp stabilizing and the handles being very well constructed. I did buy the false bottom but have not yet used it. Instead I made a cooler tun with a stainless mesh manifold - took about three hours, not difficult. The combination of the two is very helpful. Remember, this is a heavy pot when filled with 7 gallons on top of its original weight. It takes a while to boil on a high quality kitchen stove. And it is not cheap - but is high quality and value.

The description is completely wrong

I'm surprised the reviews are not as bad as they should be. The description of the kettle as well as the picture are completely inaccurate. There is a big difference between welded and weld-less kettle designs. The description and picture clearly state the kettle has two welded ports with NPT fittings (pipe thread). Welded fittings do not leak, pipe thread valve and thermometer are simple to install and will not leak. This kettle has weld-less design which means it uses straight threads and an O-ring to make a seal. All though this design is inferior and much cheaper it's not the end of the world, the problem with this particular kettle is this design. First the holes are too big and second the leaks are generated at the O-ring to thread interface. A quality weld-less fitting should provide a smooth surface for the O-ring to compress around the fitting when tightened. This design only has the threads so you have to try to compress the O-ring into the depth of the threads. The kettle was shipped with the valve and thermometer installed. The unit was in a box within a box with no packing material. Sure enough the valve was hit and bent the pot, closer inspection shows a crack in the kettle from the valve hole about an inch long, clear across the sealing surface. Finally there was another dent on the opposite side. With all that said I would probably still kept the kettle because like many others said, you can't find a pot with a clad bottom and a SS valve and thermometer for the price. However the crack makes it useless. The only reason I give it more than one star is because the kettle itself is not bad. What a shame the seller does not correct the description and picture to tell the truth. It has been wrong for years. I read the reviews but guessed they must have changed to welded based on the description and picture. Somebody in this company is clearly intentionally misleading Amazon patrons. Read the reviews and take a look at the description and the second picture and ask yourself why would the company not fix the false advertisement in all these years?
