Pressure canned apple butter, in pints and half pints, using the Duo 10-quart pressure cooker/canner and very satisfied with its performance. The spring-style pressure mechanism is very quiet compared to the rocker style, and the psychological effect is less like a rocket launch and more like using ordinary cookware. The solid-bottomed 18/10 stainless steel has a beautiful, mirror-like finish and is compatible with induction range tops (Fagor manufactures induction ranges). The pressure slide did hang up one time, and the cooker wouldn't pressurize, but with persistence the slide goes in with a little wiggling. The 10-quart Duo holds four pint or five half-pint jars on the slightly undersized canning rack - a reasonable load for the home canner. The stainless steel ladle and funnel look great and are almost as solid as the cooker. The stainless steel funnel can be submersed in boiling water, and although that's not really necessary with pressure canning, why not kill bacteria when you can? The magnetic lid lifter is a great tool if you are boiling the lids, also not necessary except for water bath canning, but if you're rinsing the funnel in boiling water, why not throw in the lids for good measure? Haven't used the jar wrench because you only tighten lids finger tight when pressure canning. The bubble freer is a useful tool and the jar lifter is a must -- it's great to get all the tools as a set. As a pressure cooker, the Fagor Duo 10-quart can handle anything you can throw into it. Brown a pot roast, throw in two cans of mushroom soup, a packet of onion soup, a cup of water, pressurize and an hour later you have a pot roast with fabulous sauce. Vegetables should go in later or above the roast in the optional steamer insert to avoid turning them into mush. The manual is well written and the DVD features a couple of professional chefs who do a terrific job of showing how easy it is to pressure cook various dishes, including grains and cheesecake. The video hosts are charming and natural, and the DVD gets five stars for taking the fear and mystery out of pressure cooking.

5I'm glad I went for the 10-quart but wish I had gotten the steamer set

I had a really hard time deciding which Fagor pressure canner to buy, and I almost wish now that I'd purchased the 10-quart one with the steamer insert instead of this set. It's not that this isn't a fantastic set, but I already had everything I needed to can with except for the canning rack. I realized after it all arrived that I probably could have found something suitable to fit this pressure canner at the thrift store. Now I'm using it to cook all kinds of things, and I really want/need that steamer basket!What I want to say is that I was afraid of pressure cookers from childhood experiences in the fifties. Once my mother blew up her pressure cooker, splattering super-hot food all over the kitchen. I'll never forget it. It was like a bomb going off! Then one day she couldn't get it open at all and wound up throwing it out in the garden to see if it would ever loosen up enough to open it. (It never did, and we had to eat oatmeal for dinner that night.) So, understandably, I was nervous the first few times I used my new pressure canner, but I shouldn't have been. Once I stopped forgetting to push the pressure knob into position, it works predictably, and I find cooking is a whole heck of a lot easier now than I did before. I realize, too, why my mother's chuck roasts were so divine and why mine couldn't hold a candle to hers: She cooked hers in the pressure cooker!I won't regale you with what high-quality products the Fagor pressure cookers are. Let's just say that I've fallen in love with mine. And the day I cooked my first cheesecake in my pressure canner (using Lorna Sass's method from "Pressure Perfect") and it tasted as good as the best New York-style cheesecake I've ever had, I figured I'd just about died and gone to heaven!I wish Fagor would come up with a two-sided laminated chart (suitable for the fridge door) with basic timing charts for various meats, vegetables, beans, and grains; package it with their steamer basket (or the steamer/grater accessory that Amazon doesn't carry); and sell it in a set like they do the canner accessories, attractively priced.P.S., and this is important: I almost bought the Duo 8&4-quart set, but then I learned that you cannot reliably can in anything smaller than the 10-quart. My fears that the pressure canner was going to be too large to use for cooking regular meals were unfounded. You can cook small amounts just as easily as you can big batches, and it's not like having a huge canner that you can't fit into the sink. I discovered that the glass lid from my commercial Calphalon stock pot fits it perfectly and, unlike my Calphalon cookware, the Fagor works excellently on my new Max Burton 6200 induction cooktop. (Anyone planning to do a lot of canning with this Fagor pressure canner, I strongly recommend you treat yourself to an induction cooktop. It will change your life.)

5Good Quality, Good food! Delicious, easy risotto!

I haven't canned yet, but I have tried 3 recipes. Everything came out great. I especially loved the risotto. I started it in a smaller stainless steel pan, sauteeing the onions and then rice, then adding most of the liquid until it was all boiling, then I inserted the whole pan into the pressure cooker on the rack (small pan is uncovered). It cooked for 10 minutes without standing there stirring it constantly for 30 minutes! It was perfect! The ribs were also amazing! I just put the dry rub on and put them on the rack, then drizzled a little bbq sauce over them. (Different sized ribs need different times, but the manual has recommended times and many recipes). A short time later the ribs were tender and yummy. I put them in the broiler just to make them a little crusty. Amazing! I can't wait to get cooking this weekend!Of course, Amazon is always a winner, too! It arrived quickly with free shipping.
