FAST Cooking and Beautiful

Fast Potato SaladUsed this to cook potatoes for a summer potato salad. Used Yukon Golds, filled insert basket with 15 potatoes, 2 cups of alkaline filtered water, brought to pressure with two rings showing for 4 minutes, quick release and the potatoes were PERFECT. Cooled them on countertop, peeled and created my potato salad.Quick Green Bean SaladDecided to try a bag of Trader Joe's Haricot Green Beans... 2 cups alkaline water, put them in steamer tray, brought to pressure with two rings for 1 minute, quick release, ice bath, drained, added dressing and refrigerated for 30 minutes.Presto Pressure CookerI also bought the Presto Stainless Steel 6 quart Pressure Cooker, but the Fissler Vitaquick is LIGHT YEARS ahead of traditional pressure cooking.BUY the Fissler, it's well worth the added cost for the ROLLS ROYCE of Pressure Cookers, the Fissler Vitaquick!Read my review and recipes at chezbettayDOTcom.UPDATE: Several people have ask about the right size to purchase. Wow!

I own several Kuhn Rikon pressure cookers which I always thought were the best. When I read the Cooks Illustrated review of PCs I was intrigued by the top-rated Fissler Vitaquick. I bought the 6.4 qt. model and now I can see why it is top-rated. This is one beautiful PC. And mounting the lid correctly is SO simple. And the full-size disc bottom is a step up from other PCs. It heats up fast and it's easy to see the pressure rings.Easy to clean. I love this cooker. In fact, I just ordered the smaller 4.2Pressure Pan Set! Cooking with pressure is a big part of my life and I use my PCs several times in an average week. This one is a real keeper.

Fissler Vitaquick is awesome!

I'm so impressed with this cooker. It's really high quality workmanship and it works like a champ. My old jiggler-style pressure cooker blew the gasket once but the main thing is the noise was really unnerving. I didn't like to cook with it so we rarely used it. The Fissler 6 qt is gorgeous, sturdy, and does its job quickly and quietly. We just made the BBQ pulled pork recipe from the included cookbook and it's the best pulled pork we've ever had (and we lived in NC for years). It was tender and delicious even without adding BBQ sauce. Tested it out boiling water and have also steamed beets. I was reluctant to go the pressure cooker route (I'm a slow foodie) but my family wanted the option of quick meals of beans and rice so there you go. I read the reviews in Cook's Illustrated and after comparing this to the lower priced option decided to go for the Fissler. Really glad I did. It arrived quickly and in great condition.

Perfect Size for High Altitude Rice or Potatoes

We live at 6200 feet and use a pressure cooker for foods like rice or boiled potatoes almost daily. i decided to try this brand after seeing a review in a food magazine that said that food would not stick.The review was correct. Even when we let rice get a little too dry it did not stick badly. The base is very heavy, and must have great heat distribution.The lid and locking mechanism are very easy to understand and use. The pop-up steam pressure indicator took some figuring out.The size we purchased (4.8qt) is perfect for rice, boiled potatoes, and vegetables. if you are doing soups or meats for a family you would probably need a larger size.The overall quality is excellent, and it seems like this pressure cooker will last for a long time. This manufacturer also makes a model that can be used as a regular stovetop pot in addition to a pressure cooker.

Perfect for everyday cooking

The 4.8 qt size is perfecto for me. It is not too big or heavy, so it is easy to use and clean. It definitely is big enough for cooking for 4 people or so. (You would need a bigger one if you want to steam a lot of vegetables or cook a whole chicken.)The quick pressure release feature is convenient and works well. The cooker heats quickly and evenly; you can sear or sauté the ingredients and then pressure-cook, which is hard to do with an electric pressure cooker. (I have an electric unit, but I don't like it at all.) I wonder how I lived without it for so long!

Kitchen Essential

I read about this in Cooks Illustrated and, on the strength of their recommendation, asked for it for Christmas. It has performed superbly. I am using it several times a week and have not been disappointed. Get the bigger size, because you will want to do roasts, broths, etc. It really cuts down on cooking time while enhancing flavor, which opens up a lot of weeknight possibilities.

Handle Leaks

I was very excited to start cooking with this since I'm a huge Cooks Illustrated fan and the idea of shortening cooking times for weekday meals really appealed to me. When I started cooking with the Fissler, I noticed that I couldn't turn down the heat without also losing pressure. Steam kept escaping from the handle valve throughout the cooking process. I kept cooking with it but if I kept the heat high enough to maintain the high level of pressure, the rice would burn at the bottom. If I ignored the pressure gauge and turned the heat to low or even medium, the meat wouldn't be tender. I've been emailing the company back and forth with detailed accounts of my problems. They made me do a test with just water and steam still kept escaping from the handle (which is not supposed to be the case, apparently). I even took it to a friend's house to do a side by side cooking comparison to his pressure cooker and pressure could not be maintained at his stovetop on low heat (his pressure cooker did fine). After several emails, the rep conceded that there was probably something wrong with the Eurovalve so they were shipping me out a new one. That was a week ago and still no valve. If this were a Kitchenaid product, they would have just sent me a new product by now, instead of shipping me a part on a brand new item. I had already read a review on another pressure cooker and apparently most of them only warranty the pot and not the valves and other moving parts. So I'm not happy about buying a brand new item that doesn't work properly and having no recourse of returning it or exchanging for a new product. I'm hoping the new part makes it work. I'm probably just the unlucky one given the great reviews by Cooks Illustrated and the other people who have bought it. But just know that if you get a defective one, it's not an easy fix.UPDATE: I received the new Eurovalve in the mail last week. It looked exactly like the old part so I had my doubts whether it would make a difference. When I did the two cup water test with the replaced valve, lo and behold, the valve closed this time and no more steam leaking through the handle! I've cooked pasta and my dreaded chicken and rice dish and no more burning at the bottom. So I've changed it to a four star rating, one star deducted for the defect with the initial valve.

Worth the Price

About six weeks ago I purchased a first generation aluminum "jiggler" model pressure cooker. It was cheap and similar to what my mother used 40 years ago. However, the build quality was much worse. My mom's was made in the USA and the new model was made in China. I loved pressure cooking but disliked the Presto.After doing some research and getting my feet wet with pressure cooking, I decided to purchase a second generation model. I looked at and ruled out the Fagor models as they are really an 1 1/2 generation model. The Fagors uses a spring instead of a weight. However they have a pop up indicator similar to the Presto. That indicator only shows pressure and not full 15# pressure. On the Presto you judge full pressure when the weight jiggles. On the Fagor you judge full pressure when the steam escapes. You regulate the temperature to a level where the steam escapes very slowly. Thus the Fagor is only generation 1.5.I wanted a true generation two cooker. In this case you have an indicator that rises under pressure. The first line is 7.5# and the second line is 15#. Using this criteria I narrowed it to Kuhn Rikon and this model Fissler. Basically, I tossed a coin and bought the Fissler.The Fissler Vitaquick works great. I have cooked a pot roast with vegetables and the next night I cooked Rotini pasta. It work as expected and the build quality is great.CAUTIONMake sure that you check that the handle is secure to the lid before using the first time. As others have stated, it is common for it to loosen in storage and transport. Always make sure it is tight or it may not come to pressure.HELPFUL TIPFollow the instructions and NOT the Fissler promotion videos.The videos show the indicator going to line two and then turning the heat lower. If you do this it will overheat and discharge steam. Then it will be hard to regulate.Follow the instructions. When the indicator gets to the first line, significantly turn down the heat. Then when the second line appears turn the heart to low. When you do this you will not have any steam escaping.When I used the Presto, I could smell the food cooking. Following the proper instructions you do not smell the food cooking with the Fissler. When I cooked the Rotini pasta I smelled nothing until I released the pressure when in was done. Then the aroma made me very hungry.I highly recommend the Fissler Vitaquick!

Well made stainless steel wok

I used to cook with a nonstick Circulon stir-fry pan, but heard that to do proper stir-fry, a higher heat must be used and nonstick is not a good material for that. So I purchased the Fissler stainless steel wok. It's a sturdy, attractive, well-made cookware with a special base that allows it to be used on an induction cook top, electric, or gas. The rippled bottom surface is purported to allow you to cook with less oil, but I have not found it to make that much of a difference. In fact, when I tried to make fried rice in this wok, the rice would stick to the stainless steel, despite my using a wok spatula to scrape the rice off during stir frying. And metal wok spatulas do tend to scratch the surface, as it would for any stainless steel cookware. So for rice based dishes I have used the nonstick stir-fry pan with much better results.I have found the Fissler stainless steel wok is perfect for using with a bamboo steamer for dumplings or steaming pork spareribs in a marinade sauce, whereas a carbon steel wok tends to lose its patina if water is frequently used for steaming.I purchased a twenty dollar carbon steel wok at Williams Sonoma and found I much prefer using this for most of my Chinese stir-frying. It heats faster (it's thinner metal), and the surface does not scratch when I use my metal wok spatula.So I have found I do not use this stainless steel wok nearly as much as I thought I would. Which is a shame as it was expensive. Still I give it high marks for the quality of construction, well made, like the other Fissler products I own (pressure cooker and stainless steel pots). And on the dishes I cook in it during the summer, I can use this wok on my portable induction burner instead of my gas stove, and keep the kitchen from heating up.

Not as good as video

The ripple bottom make food scorch easily if there is not enough juice. Not as good as I thought. I watched the intro. video, they said you don't need to do anything, just put your ingredients then heat and wait. Actually, it doesn't work this way. It is still a good pot, but not worth that price at all.

perfect pressure cooker

i never thought i would own a pressure cooker till i needed something to cut down the amount of time it takes to make corned beef. 45 minutes instead of 4 hours? i'm in.the blue point is quiet and efficient, providing the ultimate environment for corned beef, stews, beans, you name it.i remember the pressure cooker my parents used as a rattling hissing behemoth that could be heard all over the house. the blue point is quiet and can barely be heard from the next room when fully pressurized.also, releasing the pressure when the timer goes off is as easy as pushing an ergonomically positioned button. this device is worth the money and clearly will be something i can pass on to my daughter.

Fissler 8-1/2 Quart PC

I have been using this Fissler 8.5 Qt PC almost daily for about 2 months now,no complaints,easy to clean,very stable with temperature,no surprises,great company,great product!Update:..03/11/2012 I have been using this pressure cooker about 2x a week,guessing about 120 cooks, a month ago the Euromatic O ring started leaking slightly,took apart and cleaned,then replaced other way and alls ok now...gonna cost about $3 to replace the o ring...the gaskets and the rest of the cooker are like new with some scratches, but still could pass for very lightly used.I'm so impressed that i'm buying another one and placing in storage,though don't see a need for it but just incase.

The lid didn't work properly, and the person I spoke to at Fissler wasn 't helpful. I returned it! I suspect it would have been a good product were it not for the lid.

The Fissler 6.5 qt pressure cooker is a thing of beauty. It's heavy, shiny and detailed to perfection. I did look at a Fagor at Macy's and wasn't impressed by the edges of the lid; it didn't seem that care was taken in the construction. Deciding to splurge on the Fissler because of the reputation of the company, I have no regrets. You can download the manual from their site if you'd like to familiarize yourself with the instructions and features.If you've never used a pressure cooker before, remember the I Love Lucy episode where Ricky exploded the chicken and have concerns--don't worry. They have been rethought and reengineered to prevent such incidents. They are simply a pot with a locking lid. If you can drive a car, you can easily do this. There is a learning curve, mostly about time. Get a good cookbook on pressure cooking--anything by Lorna Sass will help--they all provide charts giving you an idea how long things will take to cook. Getting a Flame Tamer will also help--that's a round piece of cast iron that fits over the burner, you'll put the pressure cooker on top of that just to make sure the heat is even and the pot doesn't scorch.If the idea of cooking foods in about 1/3 the usual amount time appeals to you, you need this.

Sturdy craftsmanship, beautiful design, efficient

We just got this cooker and are very, very happy with it. Made in Germany, of 18/10 stainless steel and containing an aluminium layer in the base, this pressure cooker is sturdy and looks and feels well made. It's easy to use, and the instructions are simple and clear. It's a bit on the pricey end, however, you can find this cooker for a bit cheaper at other online retail stores, where coupons are offered (We got ours at stacks and stacks d-o-t c-o-m). If you're looking to invest in a pressure cooker that will last you a life time, this is definitely one to go with. The 6.5 quart (some places say 6.4) is perfect for cooking soups, stews and legumes (we eat lots of bean and legume dishes), for a family of 4.Review Update: July 4, 2010Just wanted to add a follow-up to the above review: After using the pressure cooker for more than half a year now, we are still really happy with its performance and durability. You can take apart virtually every piece of this cooker -- that is, the handles, the plastic parts on the opposite sides of the handle responsible for monitoring the pressure, and the blue locking attachment on the handle top. This makes the necessary, periodic cleaning of these little areas far more accessible, keeping the whole unit clean and thus functioning properly. One minor quip I have, which has more to do with my area's hard water than the cooker itself, is that the inside of the cooker stains with use -- but again, this happens to all my stainless steel pots and pans. Since our household keeps our cleaning chemical uses to the barest minimum, it takes quite a bit of elbow grease, vinegar and baking soda to keep the inside of the cooker nice looking. I just wanted to include this to tell prospective buyers that if you want the pressure cooker to keep its fantastic shine, be prepared to do some careful scrubbing and polishing! Depending on what one is making, the cooker may or may not be big enough for a family of four -- we are a family of two, and this cooker suits us just fine. However, a larger family may find the larger cookers more useful, especially if you cook to keep leftovers for extra meals. To illustrate: this cooker can cook 4 or 5 cups of dried chickpeas, but if you're making a large pot of lentil soup right in the cooker, for example, it will probably give you 6 or 7 main servings.I don't know what we were thinking all these years that we lived without this very useful piece. Hands down, if we had to buy a pressure cooker all over again, we'd certainly go with Fissler Blue Point. German engineering at its best!

Very easy to use

I bought a 6.5 qt. Fissler pc a few weeks ago and am really loving it. It's easy to use and clean. I researched whether to purchase a Kuhn Rikon or Fissler and decided I liked what people said about the Fissler better. I belong to a blog where people were discussing what they like about their pc's. I'm still experimenting with various receipes and also bought a couple Lorna Sass books to go along with the p. cooker. I was undecided what size of pc to purchase and am glad I didn't buy a bigger one, as it's good sized. What's good is that I can use it to make smaller portions as well with no difficulty.

Fissler Blue Point 5 Quarter Pressure Cooker

I have to highly recommend this Fissler pressure cooker. This was my very first pressure cooker, I followed the manual washed it well and did the first run with the water and lemon juice, then fixed beans. Being a little afraid of pressure cooker stories, I didn't cook it as long as I should have. This has so many SAFETY features, it just doesn't seem like you could go wrong, unless you do wrong on purpose. Needless to say in 40 min's the pinto beans were about 88% cooked and I was very impressed. I'm making Garbanzo beans right now. It is so silent! So completely intact, and only takes a couple minutes to reach the second white band on the rod, then just lower the heat to keep it steady and set the timer and off you go to do something else! I love my Fissler Pressure Cooker, I truly believe it was worth EVERY PENNY it cost me. I'll be using this for years! Thank-You Fissler!!! For making pressure cooking a joy!

Fagor Futuro 5-Piece Pressure-Cooker Set

I just received my Fagor Futuro 5-Piece Pressure-Cooker Set, today 07/01/2011, having ordered it two days ago, Amazon Prime, with next day delivery. I had previously purchased a programmable Cuisinart pressure cooker from Amazon.com, and was quite satisfied with it (note, the 5 Star review rating I gave it); however, the other day, as I noticed the "non-sick" surface of the Cuisinart Pressure Cooker had started to peel/chip, this was it, for me. During the past six years, I had already replaced every piece of "non-stick" cookware in my home with tri-ply stainless-steel/aluminum clad, and Lodge Logic Cast-iron cookware, and so wasn't about to put up with a peeling/chipped "non-stick" cook surface, not even in my pressure cooker.After some subsequent online research of current pressure cookers available, I determined that this "Fagor Futuro 5-Piece Pressure-Cooker Set", is just what I want/need in a no-nonsense, modern, durable, and easy to use and maintain pressure cooker. It's a bit more expensive than some others I reviewed, but I tend to purchase for the long haul. I like everything about the quality of this 5-Piece-Set Fagor Pressure Cooker, it's made in Spain, has a ten year warranty, and parts/accessories should they be needed or wanted, can be easily seen and ordered from the Fagor USA online web site. This set, also, with the two cook pans doubles as either regular 4-qt or 6-qt pressure cookers or regular cook pans with the included glass cover usable with either cook pan. These two pans, also stack, one in the other, and along with the unique short handles of this set, make for easy/convenient storage, in little space. The Fagor stove top pressure cookers are now my choice, when it comes to pressure cookers, and I'll never again purchase anymore "non-stick coated" cooking surfaces, for my use, not even in a pressure cooker.

So far so brilliant

The quality of this cookware is impressive. Nice heavy heavy bottom with an aluminum core, gorgeous shiny stainless steel finish on the outside, etc. I also love that the pots nest for storage. The whole set does not take up much cabinet space, and since this set includes a non-pressure glass lid and steamer basket, I was able to get rid of my vegetable steamer pot.I've only made 1 batch of risotto in it, but it turned out delicious, and was cooked so quickly! The pressure lid was very easy to lock into place, the indicator rod is bright yellow, so it's very easy to see, and the quick release valve worked perfectly. I can't wait to try some other dishes in my new pressure cooker!One thing to note: the packing materials in the manufacturer's box are not substantial. The first set I was shipped (by another retailer) had a broken handle on the 4 quart pot. The replacement set I received was perfect.Also good to know: Fagor's website sells replacement parts for just about anything that could break or wear out on this- handles, valves, gaskets, etc.

Another excellent Fagor pressure cooker

I've bought several Fagor pressure cookers through the years and they always work fine. In fact they work great! This pressure cooker is no different. The only thing that's kind of tricky is getting the lid lined up so the pressure cooker is sealed. The Splendid and Duo models are a bit easier to line up but it's not a problem.I do love the short handles used to make this pressure cooker set which is why I bought them. You can store the pots using less space.As always I highly recommend the Fagor pressure cookers. They work well and are our far cheaper than their pricier counterparts.

Kitchen life changer!

I am one of those people that has always liked the thought of "nutritional, home cooked" dinners. By the time I think about cooking the stews/roasts/whole chickens/etc. it is already too late in the day so there they sit in the freezer while I am running to the store for something quick. It's really sad to see beautiful, fresh stew vegetables (along with great intentions) go bad in the refrigerator. Well, NO MORE!!!!If you are thinking about buying a pressure cooker, go for it! Mine came in the mail yesterday and I made Tortellini Stew last night - oh my gosh it was the most tender stew meat we've had in years. It was even better than sitting in the crock pot all day! I did not pressure cook the little tortellinis :) but everything else cooked so easily. I put the stew meat in with garlic, olive oil, tomato paste and about 2 cups of stock. That pressure cooked on high for 10 minutes. Then I released the pressure (my husband calls it "releasing the aromas" because it smelled soooo good) and added in the mushrooms, carrots, celery, spices, and more broth. I brought that up to low pressure and let it go for about 3 to 4 minutes. Then, added in the tortellinis with the lid off for a couple minutes and we had a dinner in MINUTES that used to take literally HOURS!!!I decided on the Fagor 10-quart futuro model for several reasons:1. It's stainless steel. I don't like cooking with aluminum.2. The 10-quart size is awesome and it is not too big. It's just right for my family of four because we like leftovers and have company for dinner often.3. I like that this model is made in Spain rather than China.4. I liked the steamer basket/grater that came with this.5. The easy handles on the lid. I went back and forth on this one, but after using it am SO GLAD I went with this handle design. It will store nicely and it really is super easy.6. The two pressure settings of 1 and 2. It will be nice having a lower pressure setting when I cook tender vegetables.It was so intimidating that first go-round but it was so easy! You should see the steam fly out when released. It's amazing how the cooker can sit so quietly on the stove. I was not expecting the big rush of steam, so it made me jump the first time but these are totally safe and really make cooking fun and GOOD! I had no problems taking the lid off when the pressure came down. I was a little nervous about that, too, but it was no big deal whatsoever!

Quick and easy

I received this model as a wedding gift and have never looked back. I was scared of pressure cooking - the burning of things, the exploding lids, the "is it done yet" questions. This pot has never failed me. I use it all the time to cook up legumes and veggies. No more store bought beans for our family. It cooks about 2 times as fast as my friend's cheap aluminum one, so it holds pressure well. The lid is easy to set up, the safety features don't get in the way, and as long as you remember to line up the marks on the lid with the ones on the handle, you will never have a problem. I've had it for over 2 years, use it very often and I'm yet to replace the gasket. Could not be happier.

My Fagor-ite Pressure Cooker

I bought a Fagor 10 quart pressure cooker about 3 weeks ago and so far the only quibble I have, and it's not a big one, is that it could be a little easier for newbies to tell when the thing is up to its cooking pressure. The manual, and the video that came with the PC both say that it's up to pressure when the little yellow button pop up. That's not actually true. When the button pops up, that means that the pot is pressurized, not that it is up to 15 psi. It is up to full pressure when wisps of steam start coming out of the relief valve.Today I made Lentil Soup with 10 minutes of cooking time. If I had started timing when the yellow button popped up the lentils would not have been done because it took (I'm guessing here, I didn't time this part) an extra 2 or 3 minutes from the point where the yellow indicator button popped up to when stream started coming out of the relief valve. If the steam is hissing out then you need to turn down the heat until wisps of steam gently escape.I have an electric stove so there's that issue of "thermal inertia" where I make an adjustment to but it takes a short bit of time for it to respond. It is just the nature of the beast for electric ranges. A good tip from a PC cookbook said to use two burners, one to heat the PC up to pressure and a second burner turned on at the same time to a lower setting so all you have to do is move the PC from the high temperature burner to the lower temperature one.I had an "El Cheapo" stainless steel old-style (first generation) PC and the setting on my stove for cooking was the letter "M" on the word Med. on the dial. With the Futuro all I need is the "m" on word Wm on the dial. This is a much lower setting. It is surprising how little energy is needed to maintain pressure with this PC.The build quality is excellent - one reason I bought the Futuro is that this model is still made in Spain. I've had enough trouble with Made in China gear that I wasn't about to trust our well-being to Chinese quality control. (This is a whole other issue but I now look for alternatives to Chinese made items whenever possible). If they are willing to add a poisonous material (melamine) to milk to make it test higher in protein and kill a handful of babies and sicken thousands more how much could they care about me standing in front of a stainless steel pot pressurized to 15 psi? I shouldn't have to worry that my PC is an I.E.D.(Taking a breath now)The bottom of the pot is very thick and spreads the heat well. As I said earlier, I made Lentil Soup today and I realized as it was nearly done that I added the lentils first so they were sitting on the bottom of the pot and I added the other ingredients on top of them. I use highest heat setting to bring the PC up to pressure (an electric stove will boil a pot of water quicker than a gas stove) so it is a very high heat. I was worried that the beans might burn a bit because I'd forgotten to stir the ingredients before heating up to pressure. But when I emptied the pot there wasn't the slightest evidence of that. The soup is delicious!I like the short handles on the Futuro, it is easier to store. The operating valve is simple to remove and clean and the silicone gasket is easy to remove and it makes no difference which side is up when replaced so there is one less thing I can screw up. I bought the glass lid for $10 from Amazon and now I've got a very high quality 10 qt. pot for non-PC usage.A couple of days ago I made Pulled Pork for sandwiches from a 4.5 pound piece of boneless pork loin (lower fat, ya know) that turned out wonderfully in the PC. We're having that again tonight with a cup of Lentil Soup. This has changed the way we do much of our cooking.I'm sorry if I'm burying the lead but the new generation of pressure cookers is very, very safe. They are nothing like the ones that your mothers or grandmothers had. I'm assuming that most people who are looking at these fairly expensive PCs already know quite a bit about them so you probably know that but I felt I should make the point for newbies.Buy a couple of good PC cookbooks when you buy your PC and you'll get a ton of good advice about using them, including how to adapt your family's favorite recipes to the PC.Good grief! Did I do 800+ words about my PC? I need an editor after only one margarita.If you're looking for a PC you can't go wrong with the Fagor. Enjoy!
